Tomato and Cucumber Mediterranean Salad

Serves 4

What you need:

  • 3-5 medium tomatoes (any variety), large diced or halved
  • 1 large English cucumber or 6 Persian cucumbers, large quarters
  • 1 bunch fresh parsley leaves, chopped
  • ¼ pouch Haven’s Kitchen Golden Tahini sauce
  • 2 tbsp extra virgin olive oil
  • 1/2 lemon, juiced

How to make it:

  1. In a large salad bowl, add the tomatoes, cucumbers, and parsley. Sprinkle with 1 tsp salt and set aside for about 4 minutes, this allows the juices to be released.
  2. Add the remaining ingredients and give the salad a gentle toss to coat. Refrigerate until ready to serve.
